Easy peasy banana bread recipe



Happy autumn equinox! If you're like me, you're going to skip all this chatter at the start of the recipe and jump right to it...so I won't hold you any longer.


What you need:

  • 8 x 4 inch bread pan

  • Mixing bowl (I love this collapsable washing up bowl from Ikea!)

  • Potato masher (trust me)

  • 60 minutes of your precious time!


Ingredients:

  • 4 bananas, either very ripe or microwaved for 2 minutes

  • 210g all-purpose flour

  • 150g sugar

  • 75g butter, melted, or butter-like spread, as is

  • 1 large egg

  • Half a teaspoon bicarbonate of soda

  • 1 and a half teaspoons vanilla extract


Optional:

  • Ground cinnamon

  • Walnuts


Method

  1. Preheat your oven to 175°C, gas mark whatever, and line the bread pan with some baking paper.

  2. Mash the bananas in the mixing (or makeshift washing up) bowl, and mix in with the butter. We recently discovered that a metal potato masher does a far better job than a fork, which has been...revolutionary for us.

  3. Add everything else into the bowl and mix.

  4. Pour the mix into the bread pan.

  5. Bake for 50 to 55 minutes, depending on your fancy. Poke the bread with a cocktail stick (or chopstick if you haven't got one), and if comes out dry then it's ready.
